Its Part in the Food Tests
For the biuret test, a few drops of dilute copper sulphate solution go into a food sample made alkaline with sodium hydroxide; a violet colour shows protein, because the copper ions bind to the peptide bonds. Dissolved in distilled water, the salt also gives the copper solution that is mixed with alkaline tartrate in the Fehling test.
