Why the Vessel Is Covered
An open liquid surface loses heat by evaporation and by convection currents in the air above it. A lid limits both, so in a method-of-mixtures or cooling experiment less heat escapes unmeasured and the result agrees more closely with the heat balance.
Use one hole for the thermometer, set so the bulb is in the liquid without touching the base, and the other for the stirrer, moved gently up and down to keep the temperature even throughout.
