What Happens as the Pressure Falls
Strokes of the pump draw air out of the jar. A slightly inflated balloon sealed inside then swells, and a marshmallow or a little shaving cream grows in volume, because the air trapped inside them expands as the pressure around them drops. Warm water starts to boil well below its usual boiling point, since lowering the pressure lowers the boiling temperature. Changing the pressure can also move liquid from one pipet to another.
A hand pump reduces the pressure a long way but does not make a perfect vacuum. When air is let back in, the swollen balloon and marshmallow shrink again.
