Evaporating to Crystals
Fill the dish no more than half full and heat it gently on a wire gauze or over a water bath, stirring now and then with a glass rod. Stop heating once a drop taken on the rod forms crystals as it cools, then leave the rest to cool slowly so larger crystals grow. Pick the hot dish up with tongs, never bare-handed.
