Saponification and Hard Water
Soap is made by heating a fat or oil with sodium hydroxide, which splits the fat into glycerol and the sodium salts of its fatty acids. In soft water those salts form a lather and clean grease away; in hard water the carboxylate heads bind calcium and magnesium ions and fall out as scum. Modelling the soap molecule next to a detergent shows why synthetic detergents were developed.
