What the Tartrate Does
When B meets an equal volume of Fehling A, tartrate ions bind the copper(II) ions as a deep blue complex. Without them, the sodium hydroxide would throw down pale blue copper(II) hydroxide at once. Heated with an aliphatic aldehyde or a reducing sugar, the fresh mixture gives a brick-red precipitate of copper(I) oxide.
Why Fructose Also Reacts
Fructose is a ketose, yet it passes the test, because hot alkali converts it through an enediol into isomers that reduce copper(II). Sucrose shows no change until it has been boiled with dilute acid and neutralised.
Related Fehling Test Items
- Fehling A Solution — copper(II) sulphate half that B is mixed with.
- Fehling Sol B (Test Of Sucrose) — the same tartrate half, held in the biology reagent range.
- Fructose — ketose sugar that still gives the brick-red result.
