Reading a Milk Sample
Fill the cylinder with milk, lower the lactometer in gently and read the scale where it meets the milk surface once it floats still. Added water makes milk less dense, so the lactometer sinks further and the reading drops; removing cream makes milk denser and raises it. Milk warmer than 84 °F reads low and cooler milk reads high, so bring the sample to that temperature or correct the reading.
