Protease in DNA Extraction and Digestion Work
In a DNA extraction, protease is added once the cells are broken open; it digests the histone proteins wrapped around the DNA and other cell proteins, so the DNA that later separates in cold ethanol is cleaner. The same enzyme shows protein digestion directly: a cloudy suspension of milk or cooked egg white clears as the protein is broken into soluble peptides. Keep the container closed and dry.
