How the Jar Holds a Vacuum
The ground flange is set on a flat vacuum plate, usually with a thin film of vacuum grease, so that the rim seals all the way round. As a pump draws air out through the plate, the pressure inside falls while the atmosphere goes on pressing on the outside, so the jar is pushed firmly down onto the plate; the lower the pressure inside, the greater that force.
Releasing the Vacuum Before Lifting
Let air back in through the plate valve before trying to raise the jar. While it is evacuated, the outside air holds it down far too firmly to pull off, and forcing it can damage the flange; once the pressure inside and out is equal, the jar lifts away easily by its knob.
