What Is Pepsin Powder Used For?
Pepsin is a protease: it breaks proteins into shorter chains (peptides) and works in the strongly acidic conditions of the stomach. A typical practical places small pieces of boiled egg white in pepsin solution with and without dilute hydrochloric acid; the egg white in the acidified tube is gradually digested while the other changes little. Repeating it at different temperatures or with boiled enzyme extends it for school digestion lessons and college biochemistry.
