What Is the Sucrose Model Used For?
Sucrose is a disaccharide made from one glucose unit, in a six-membered ring, and one fructose unit, in a five-membered ring, joined through an oxygen bridge called a glycosidic link. The reducing groups of both sugars are used up in that link, so sucrose is a non-reducing sugar and does not react with Benedict’s or Fehling’s solution until it is hydrolysed by acid or by the enzyme invertase into glucose and fructose. Every atom and bond is represented in the kit: the 46 links match the number of bonds in the molecule, so students can check their build is complete.
